The Bee 

This Belle Pièce carries the bee from Laguiole en Aubrac's celebrated Bijou series — a markedly different treatment from the sculptural or Gothic bees found elsewhere in this collection. Here, the bee's body is formed from interlacing woven bands, almost like Celtic knotwork, with a finely cross-hatched abdomen and a cluster of leaf-like petals rising toward the head. It's less an insect rendered in realistic detail and more a piece of jewelry in its own right — intricate, symmetrical, and instantly recognizable to anyone familiar with the Bijou name.

Directly beneath the bee, the spring is set with a small faceted gemstone, the first of two running down the length of the spine — a detail exclusive to this style and one that elevates the piece from finely engraved metalwork into something closer to fine jewelry mounted on a working blade.

Gems Set in Gold

Where most of our Belle Pièce knives carry their detail entirely in engraved steel, this piece introduces something new: a gold-toned inner spine, inlaid with two faceted gemstones spaced along its length, separated by a delicate hand-engraved band of alternating leaf and eye motifs. The warmth of the gold liner plays against the cool tones of the handle, and each gemstone catches the light differently depending on the angle — a detail meant to be discovered slowly rather than seen all at once. It's the kind of ornamentation more commonly found in fine jewelry than cutlery, brought here into a piece you can actually carry and use.

A Handle Like No Other

This Belle Pièce is fitted with a handle of stabilized elder burl — a dense, richly figured wood taken from the root growth of the elder tree, prized for grain that swirls and pools rather than running in straight lines. Stabilization reinforces the burl's naturally porous structure while allowing it to take dye evenly throughout, and here it's been finished in deep, saturated tones of purple, blue, and pink that shift and blend across the handle like a night sky — no two areas of the burl catching color quite the same way. The combination of the wood's naturally chaotic figure and this striking colorway makes it one of the most visually distinctive handles chosen by the master artisan.
