The Bee

Every Laguiole en Aubrac knife carries the bee — but on a Belle Pièce, the bee is no longer an emblem carved into the spring. It is lifted free of it: shaped, filed, and engraved as its own small sculpture, then set by hand onto the piece it will never leave. Look closely and you'll find the wings carry their own fine linework, the body its own texture, each stroke placed by a single artisan working from memory and instinct rather than a template.

The Bee

On this Belle Pièce, the bee takes on a distinctly Gothic character. Rather than standing alone, it's set within a small floral frame — a flower rests just above it, while the bee's own striped, segmented body and scalloped wing-like forms are rendered in bold, blackened linework against the polished steel, giving the whole composition the graphic weight of a medieval woodcut or an illuminated manuscript initial. It's a more ornamental, storytelling treatment of the bee than a simple raised emblem — the insect doesn't just sit on the spring, it's woven into a small scene.

This same hand carries down into the fine scrollwork bordering the blue spacer, so the Gothic sensibility isn't confined to the bolster alone — it sets the tone for the whole piece, even where the guilloché itself is more restrained than on some of its Belle Pièce siblings.

A Handle Chosen for Its Grain

This knife features a handle of beige and brown Beechwood sourced from the emblematic tree of the Aubrac plateau. Look closely at the handle and you'll notice fine, silvery streaks fanning through the wood — this is genuine medullary ray fleck, a natural feature of Aubrac beech. It appears when the wood is cut on the quarter, slicing across the tree's radial ray cells rather than along them. The result is this subtle, almost sunburst pattern of light against the darker grain — a mark of the wood itself, not an applied finish or engraving.

A Line Cut by Hand, Hand-Cut Guilloché

Where some Belle Pièce knives carry an elaborate, full-length guilloché, this one takes a more understated approach. A slender scroll pattern borders the blue spacer along the spine, paired with a small engraved flower at the bolster — a lighter touch than the dense chevron or arched work found elsewhere in the collection. It's a deliberate restraint rather than an absence of craft: the guilloché here plays a supporting role, letting the Gothic bee motif and the handle's own grain carry the piece instead.

Construction
