The folding pocket knife is the heart of Laguiole en Aubrac®. Each knife is handcrafted in Espalion, in the Aubrac region of France, most with a 12C27 Sandvik stainless steel blade, and comes with a certificate of authenticity. Sizes run from 3.5 in (9 cm) and 4.3 in (11 cm) to the traditional 4.75 in (12 cm), plus some 5.2 in (13 cm) and 5.5 in (14 cm) models.
