Compare Laguiole en Aubrac Steak Knife Sets

Every Laguiole en Aubrac steak knife is made in Espalion, in the historic Laguiole area of the Aubrac, by the workshop founded there in 1992. Nearly every set shares the same knife: a 4.25-inch (11 cm) smooth blade in Sandvik 12C27 stainless steel, never serrated, with the shepherd's cross on the handle and a certificate of authenticity in the box. A smooth edge slices meat cleanly instead of tearing it and can be resharpened at home. What changes from set to set is how many knives you get, the handle material, the bolsters and, on a few lines, the blade itself. This guide puts the lines side by side so you can choose for two people or for the whole table.

Caring for your steak knives

Wash Laguiole en Aubrac steak knives by hand in warm water with a little mild soap and dry them straight away. Keep them out of the dishwasher: the heat and detergent dry out wood, crack horn and bone, and void the warranty. Wipe wood and horn handles with a little mineral oil once or twice a year, and store the knives in their wooden box rather than loose in a drawer. A smooth 12C27 edge sharpens easily on a fine whetstone or ceramic rod at about 20 degrees. Full instructions are on our care and tips page.

Questions

Are Laguiole en Aubrac steak knives serrated?

No. Every Laguiole en Aubrac steak knife has a smooth blade. A smooth edge is sharper, slices meat cleanly instead of tearing it, and can be resharpened at home.

Which steak knife set should I start with?

The handcrafted 6-piece set in olivewood or buffalo horn. For two people, the handcrafted 2-piece set starts at $179.95.

How long are the blades?

4.25 inches (11 cm) on almost every set. Le Gastronome has a longer 5.2-inch (13 cm) blade, and the knife-and-fork sets use a 4.33-inch (11 cm) blade.

What steel are the blades made of?

Sandvik 12C27 stainless steel, except the Damascus sets, which have layered Damascus blades.

Are they dishwasher safe?

No. Wash them by hand and dry them immediately. Dishwasher heat and detergent damage natural handles and void the warranty.

Where are they made?

In Espalion, Aveyron, in the historic Laguiole area of the Aubrac in France, by Laguiole en Aubrac, founded in 1992. Sets come with a certificate of authenticity.
