The Bee
Every Laguiole en Aubrac knife carries the bee — but on a Belle Pièce, the bee is no longer an emblem carved into the spring. It is lifted free of it: shaped, filed, and engraved as its own small sculpture, then set by hand onto the piece it will never leave. Look closely and you’ll find the wings carry their own fine linework, the body its own texture, each stroke placed by a single artisan working from memory and instinct rather than a template. On this piece, the bee’s wings are veined like leaves and its ringed body is finely dotted.

This is the distinction that separates a Belle Pièce from the rest of the range. Where our other high-end knives feature a hand-chiselled bee in relief, the Belle Pièce bee is fully dimensional — a standalone piece of metalwork in miniature, requiring hours of additional, uninterrupted focus from one of our most senior cutlers. The same exacting hand carries through to the handle and spring, where grain, bone, or burl is worked to let the material’s own character lead the design.

A Line Cut by Hand
The spine runs as a broad ribbon of satin steel, left clean at its centre and bordered on both edges by a chain of small triangular teeth, chiselled by hand and outlined in black against polished silver. Halfway down, the chain is interrupted by a single engraved bloom, its petals radiating from a ringed centre, with two veined leaves, laid across the spine at the point where it meets the central bolster. The flower splits the line into two segments, one from the bee to the bolster and one from the bolster to the heel, so the spine reads as a sequence of bee, chain, flower and chain rather than a single repeating pattern.

A Handle Like No Other
Cut from walnut burl, the knotted growth where the tree’s grain twists in on itself. Deep chocolate and cinnamon browns run through the handle, with smoky black swirls and copper-warm highlights drifting across it like ink in water. A satin stainless steel bolster at its centre divides the handle in two. Walnut burl is never uniform, so each pair of handle scales is its own landscape, and no two knives are ever alike. Hand-polished, it takes a deep, silky finish that only warms and deepens with the years.

A Blade Like No Other
The blade is Balbach Damast Damascus, designed and manufactured by master German blacksmith Markus Balbach, whose Damascus blades are renowned around the world. Made with his patented DSC® (Damascus SuperClean) process, which eliminates impurities and seam lines, the steel is both exceptionally durable and precisely patterned. On this drop-point blade, that pattern rolls along the steel in rippling waves of silver and charcoal. It is a working edge and a piece of art in one.
